Facts about eggs
• There are 17.000 very little holes (pores) on an eggshell.
• An egg refrigerated for one week is fresher than an egg kept at room temperature for one day.
• If eggs are kept for a long time, they will get lighter in weight due to loss of water and carbon dioxide.
• Vegetables are not rich in proteins. Therefore, when you cook vegetables with eggs, you will get a balanced diet with proteins, vitamins and minerals.
• If you consume eggs with grains (for example, if you add eggs into macaroni or pasta or pastries), you will enhance the quality of the egg proteins.
• Eggs are like cement. You can use eggs to prepare many dishes as a fixer.
• If you put a fresh into a 10% saline solution (60 g salt in half liter water) it will go down, while a bad egg will float on the water surface.
• You can understand if an egg is fresh or bad in the best way if you break it. When you break a fresh egg, the white and the yolk will not completely separate and will not mingle. The yolk will be spherical and domed.
• We can use eggs to enhance the nutritional value of dishes.
• The egg white proteins can foam and hence expand in volume. Therefore, eggs are used as natural expanders in sponge cakes.
• As egg proteins harden in high temperatures, eggs are used in desserts and soups as stiffeners and viscosity enhancers.
• Hardboiled eggs can be used to decorate salads (bean salads, potato salads, etc).
• Eggs are used to color cakes and pies.


Is This Egg Fresh?


The air spaces in bad eggs are larger and the inside of the eggs are spoiled. When you shake an egg, you should hear a sound. Cracked or broken eggs preferred for their being cheaper must never be used because they are the perfect place for bacteria.

When you hold a fresh egg to light, it will look translucent. Bad eggs are not translucent. When you break a fresh egg, the white will be transparent, and the yolk will be intact, flexible and domed.

Put some salty water into a bowl, and put the egg into the water. If the egg is at the bottom of the bow in a horizontal position, then it is fresh. If the egg is in the bowl in a vertical position, then it is medium fresh. If the egg floats on the water, then throw it away.


How to Store Eggs


Store eggs in the egg shelf or keep them in their own cardboard box in the refrigerator. If you put them into a different container, the bacteria and other germs may contaminate the container and may cause diseases. Make sure that the eggs do not get in contact with the other foodstuffs in the refrigerator.
